Recipes…Guacamole With A Twist

One of our favorite plant-strong recipes:

  • GUACAMOLE WITH A TWIST:  Guacamole is a creamy, decadent, and yet healthy treat.  This recipe has a twist since it calls for half peas and half avocado.  Let’s compare some nutrition facts:

    1 cup of Avocado provides:

    240 calories

    22 grams of fat

    3 grams of protein

    10grams of fiber


    1 cup of Peas provides:

    134 calories

    0 grams of fat

    9 grams of protein

    9 grams of fiber


    Remember that avocado is a delicious and healthy choice when eating a plant-based, whole foods diet as it provides heart-healthy mono- and polyunsaturated fats and loads of vitamins.  But the addition of peas keeps the fat amount in check and adds even more protein.  Here you go:

    Secret Ingredient Guacamole

    1.5 cups Frozen Peas (yes, frozen peas)

    1/2 cup Water

    1.5 cups Avocado

    1/4 cup Cilantro, chopped

    1/8 cup Green Onion, chopped

    6 Tbl Fresh Lime Juice

    1.5 Tbl Minced Garlic

    1 tsp Jalapeno, minced

    pinch of Cumin

    Salt and Pepper to taste

    BLEND frozen peas and water in food processor.  Then add remaining ingredients and process to desired consistency (less for chunky guacamole and more for smooth).  You can play around with the spices as you wish; this is an easy recipe to make even if you are missing one or two ingredients as it’s the peas and the avocado that are important.  Enjoy!
