Recipes…Vegetarian Coconut Curry

One of our favorite plant-strong recipes:
  • VEGETARIAN COCONUT CURRY:  We eat curries all the time because they make great satisfying vegan and vegetarian meals.  You can substitute or add any vegetables you have on hand (roasted sweet potato or butternut squash add color) and you can substitute coconut water for half of the coconut milk called for in the recipe.  Click here for the recipe.
